The grapes were harvested during the cool of the night and early morning to preserve freshness before being crushed into static fermenters. Fermentation took place on skins for seven days with careful temperature control, ensuring optimal colour and flavour extraction before pressing. Following malolactic fermentation, the wine was matured in a combination of oak to build complexity while maintaining the purity of the fruit.In the glass, the wine reveals a deep crimson colour with bright vibrancy. The nose opens with expressive aromas of tomato leaf, ripe plum and dark chocolate, supported by hints of clove and earthy nuance. The palate is smooth and generous, unfolding with flavours of rhubarb, olive and coffee layered over dark berry fruit.
