Bouquet:
Fresh, juicy nectarine, white peach and nashi pear greet the nose, followed by aromatic musk and honeydew melon notes—Fruity and refreshing.
Palate:
The palate is light and crisp with a bright acidity. Flavours mirror the nose, with abundant stone fruits such as nectarine, white peach and pear dominate the palate. The mid-palate reveals a delicate creamy texture, resulting from 4 months of ageing on fine lees. Finish with lingering citrus notes and a subtle minerality that adds to the complexity.

Vintage Condition:
After a mild spring, we had the wettest December in 130 years. The vines were super happy resulting in lots of vegetative growth which came in handy in March with a brief heatwave over the long weekend, the extra green leafy shoots protecting the soft, ripening berries from any sun damage. The result was a perfect sugar-acid balance and clean, bright fruit.
Winemaking:
Sourced from our Beresford Estate Vineyard at Blewitt Springs. Pecorino ripened slowly during the harvest and then quickly showed lovely fruit flavours. We were able to select the best-tasting rows, harvest the grapes in the cool of the morning & gently extract the juice.
The fruit was harvested in the cool of the early morning, chilled and pressed gently, with 25% whole bunch pressed adding texture and palate weight. Various yeast strains were used including non-saccharomyces and mixed cultures. The clean juice was fermented below 18 degrees to preserve lifted aromas and crisper stone fruit flavours. The wine spent 4 months on light yeast lees with occasional lees stirring to contribute to a textural, creamy mouthfeel. Fined with vegetal protein.
