This rare whiskey was bottled under the strict tenets of the Bottled-in-Bond Act of 1897. Aged in the temperate climate of the Northern California coast, the original distillate was altered only by the addition of pure water from the Russian River Valley aquifer. This is the purest expression of Redwood Empire s craft.
The name Grizzly Beast is a combination of two trees: The Grizzly Giant, a giant Sequoia located in Yosemite National Park that has over two billion leaves, and the Mattole Beast, a massive 375-foot coastal redwood located in Humboldt Redwoods State Park.
Tasting Notes:
Colour: Bronze, honey.
Nose: Charred sugar, cherry cola, reduced red currant.
Palate: Molasses, almond brittle, lemon bar.
"The nose presents with light vanilla notes, a touch of caramel and fruits like cherry and tart apple come through as well. There's a light smoky char in the mix as well. The Grizzly Beast is a bit of a gentle giant proof wise -- at 100 proof you'll definitely notice the alcohol, but it's a warming feeling rather than a swipe to the throat. The barrel spices are lively with cinnamon and allspice. Adding some water will give the bourbon some roundness and a bit more caramel sweetness, but it's not required element. The flavors are of that like a stiff Old Fashioned with the added cherry so just add a couple of large rocks to your glass and enjoy!" - Stephanie Moreno, Distiller (90 Points)
